Zucchini Fritter Cakes

  • 2-3 medium organic zucchini, grated
  • 1 tbsp coconut flour (or flour of choice)
  • 1 egg
  • 1 tbsp flaxseed meal
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp red pepper flakes
  • 1 tsp Mrs. Dash salt-free Italian Seasoning
  • 2 1/2 tsp Himalayan sea salt
  • 1/4 tsp freshly ground pepper
  • 1 tbsp extra-virgin olive oil
  • Optional: 2 tbsp scallions, chopped
  • Optional: 2 organic carrots, grated
  • Optional: Serve with homemade tomato sauce, full-fat greek yogurt, or unsweetened organic applesauce

Directions: 

  1. Using the coarse side of the cheese grater, grate zucchini into a bowl
  2. Sprinkle with Himalayan sea salt and let sit for 10 minutes
  3. Wring out excess water (press against the holes of a colander with a wooden spoon or wrap zucchini in a clean dish towel or piece of cheese cloth)
  4. Transfer zucchini back to bowl
  5. Combine zucchini with flour, flax, eggs, spices, additional salt, and mix well
  6. In a large skillet, heat oil
  7. Drop small bunches of zucchini mixture onto skillet and lightly flatten
  8. Let cook for 3-5 minutes until golden brown
  9. Flip, and cook on the other side until golden
  10. Transfer to a plate coated with a paper towel
  11. Add oil to the skillet as needed, and repeat until all the batter is gone
  12. Serve hot with desired dipping sauces
  13. If serving at a later time, store in fridge, when ready to heat, preheat oven to 375 and let bake until hot and crispy

Maple Roasted Brussels Sprouts with Bacon

I was never a fan of brussels sprouts until about a year ago, and now I can’t get enough! This is a great Fall side dish. It combines savory and sweet tastes to adhere to just about anyone’s liking!

Ingredients:

  • 2 lb. brussels sprouts, halved & outer leaves removed
  • 2 tbsp + 1 tsp extra-virgin olive oil
  • 1/2 tsp Himalayan sea salt
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp ground garlic
  • 1-2 tbsp pure maple syrup
  • 4 strips nitrate-free bacon

Directions:

  1. Preheat oven to 425
  2. Halve brussels sprouts and remove outer leaves
  3. Line baking pan with foil
  4. Toss brussels sprouts with oil, salt, and pepper
  5. Roast, stirring mid-way, for 20-25 minutes until caramelized and tender
  6. While roasting, cook bacon using desired method (oven, microwave, or skillet), let cool and set aside
  7. When brussels sprouts are done, heat 1 tsp oil in a large skillet and transfer them to the skillet
  8. Pour 1 tbsp maple syrup over the brussels sprouts and toss to coat evenly with a wooden spoon
  9. Let cook for 3 minutes over medium-low heat, stirring often
  10. Taste and add the 2nd tbsp maple, based on desired taste (I didn’t find it needed it)
  11. Sprinkle bacon and extra Himalayan sea salt on top and serve hot

Basic Hamburger Recipe:

Ingredients:

  • 1 lb. grass-fed beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 egg
  • 1 tsp organic corn meal (or breadcrumbs of choice)
  • 1/8 tsp Himalayan sea salt
  • 1/8 tsp freshly ground pepper
  • Optional: 1 tsp red pepper flakes

Directions:

  1. In a bowl combine all ingredients and mix well
  2. Form into bite-size patties (balls) and place on greased grill/grill pan
  3. Cook for 4-5 minutes on each side or until cooked through to your liking

Putting Together Burger Bites:

  1. On a plate, place bite-size burger patties
  2. Add desired topping and pin a toothpick through to hold the ‘bite’ together
  3. Serve hot with desired dipping sauces

Oven-Baked Zucchini Fries

I love… french fries. There I said it! What I love even more is making healthy options for my fries so I don’t ever feel the need to indulge in the bad ones. These zucchini fries are PACKED with flavor and beyond crispy on outside. They make the perfect side dish any night of the week!

Ingredients:

  • 3-4 organic zucchinis
  • 2 eggs
  • 1/4 cup organic corn meal
  • 1/4 cups almond meal
  • 3 tbsp fresh parmesan (can omit)
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes, more to taste
  • 1/2 tsp Himalayan sea salt, more to taste

Directions:

  1. Preheat oven to 425
  2. Line a baking sheet and grease lightly
  3. Cut zucchini into fry slices and pat extra moisture dry with a paper towel
  4. In a large shallow bowl mix corn meal, almond meal, Italian seasoning, parmesan, red pepper flakes, garlic powder, salt and pepper
  5. In a separate shallow bowl crack the eggs and whisk together
  6. Dip zucchini strips into egg, then dredge in ‘breadcrumb’ mix
  7. Lay flat on baking sheet
  8. Bake 12-15 minutes, flip, and make for another 12-15 minutes until golden brown and crispy

Notes:

  • For extra crisp, broil on high for 3-5 minutes at the end
  • I serve my zucchini fries with tomato sauce and roasted garlic dip

‘Aloha’ bison burger topped with grilled pineapple, SAUTÉED spinach, nitrate-free bacon, and tomato

Roasted Garlic Dip: 

Ingredients:

  • 3 cloves garlic, roasted
  • 1 tsp + 1/2 tsp extra-virgin olive oil
  • 3 tbsp homemade mayonnaise
  • 1 tsp lemon juice
  • Himalayan sea salt, to taste
  • Freshly ground pepper, to taste

Directions:

  1. Preheat oven to 425
  2. Cut end off garlic cloves
  3. Place garlic in a small ramekin
  4. Pour 1/2 tsp oil over garlic
  5. Cover with foil and roast for 25 minutes until garlic is soft
  6. Remove soft garlic and smash with a fork
  7. In a bowl whisk together homemade mayo, smashed roasted garlic, 1 tsp oil, lemon juice, salt and pepper

Loaded Cauliflower Cakes

Potato Latkes were a staple side dish growing up in my family, and not just on the Jewish holidays! These cauliflower cakes remind me of the side dish I have always loved, while bringing so much more to the table. These fritter cakes are packed with flavor and make for a delicious healthy side dish!

  • 1 head cauliflower
  • 1/2 cup scallions, chopped
  • 1/2 yellow onion, chopped and sautéed
  • 1 garlic clove, crushed
  • Optional: 5 strips crispy nitrate-free bacon
  • Optional: 1 jalapeño, seeds removed and diced
  • 3 large organic eggs
  • 5 tbsp gluten-free organic corn meal (or gluten-free flour of choice)
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1 tbsp (or more depending on quantity) extra-virgin olive oil
  • 1/2 tsp Mrs. Dash Italian Seasoning
  • 1/2 tsp Himalayan sea salt, more to taste
  • 1/4 tsp freshly ground pepper, more to taste
  • Optional: If you eat dairy & are a cheese lover, add 1/3 cup shredded cheddar to the batter
  • Optional: garnish with extra scallions and chopped bacon
  • Optional: serve with sour cream, tomato sauce, or unsweetened applesauce

Directions:

  1. Chop cauliflower into florets
  2. Steam cauliflower until tender (using a steamer insert: In your pot bring about an inch of water to a boil. Place cauliflower florets in the steamer basket (and then into the pot), cover, and steam until tender, 8-10 minutes)
  3. While steaming, saute onions in a small pan and cook bacon
  4. Once steamed, place in a large bowl of ice-cold water
  5. Drain well then mash cauliflower with a potato masher
  6. Drain excess water in a colander for about 10 minutes (make sure to drain VERY well)
  7. In a bowl, whisk together bacon, eggs, scallions, jalapeño, sautéed onion, 2 tbsp corn meal, Italian seasoning, garlic, salt and pepper
  8. Add in mashed cauliflower, remaining corn meal, flour, and baking powder and mix well
  9. Heat 1 tbsp oil in large skillet
  10. Drop tablespoons of batter into the skillet and lightly flatten (I rolled mine into balls using my hands)
  11. Cook until golden brown (4-5 minutes), flip, and cook until golden brown on the other side
  12. Add more oil as needed until all cakes are cooked
  13. Place on paper towel to drain
  14. If you want them even crisper, place on baking tray and broil on high for 5 minutes
  15. Serve hot and garnish with extra chopped bacon and scallions and your desired dipping sauces

Notes:

  • I tried a piece after the first batch was done and decided to add a bit more salt. Depending on your desired taste, you may want to try one and add based on your liking!
