Italian-Style Mini Meatloaves

Italian meatloaf, loaded with veggies, spices, and delicious sauce… A great variation on a meat dish, right? I thinks so, especially when made into a mini-size that is the perfect serving of protein! The trouble I have always found is that many meatloaf recipes contain bread/breadcrumbs, sugar and other ingredients that make them not an ideal recipe for clean eaters or the allergy-friendly folk. I bring you an Italian-style meatloaf that clean, allergy-friendly, and is bursting with flavor!

Gluten-free Mini Meatloaves | Lexiscleankitchen.com

Ingredients:

  • 1 lb. organic grass-fed beef
  • 1 onion, finely chopped
  • 1/2 cup baby bella mushrooms, finely chopped
  • 1 clove garlic, crushed
  • 1 tsp extra-virgin olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/4 cup grated carrot
  • 1/4 tsp Himalayan sea salt
  • 1/4 tsp freshly ground pepper
  • 1 tbsp fresh basil, chopped
  • 1/2 tsp red pepper flakes, more to taste
  • 1/2 cup tomato sauce (jar or homemade)
  • 1 organic egg
  • 2 tbsp breadcrumbs or flour of choice, I used organic non-gmo corn meal

Directions:

  1. Preheat oven to 350
  2. Grease mini meatloaf pan (or muffin pan)
  3. In a small skillet, heat oil and garlic, sauté onion and mushrooms until translucent
  4. In a bowl, combine beef, veggies, spices, egg, and 1/4 the tomato sauce, mix well
  5. Fill meatloaf pan/muffin pan to the top with meatloaf mixture
  6. Bake for 20-25 minutes or until fully cooked through
  7. Let cool, and serve with the remaining tomato sauce on top
  8. Optional: garnish with fresh parmesan and fresh basil

Serve with your favorite roasted vegetables on the side!

Basic Hamburger Recipe:

Ingredients:

  • 1 lb. grass-fed beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 egg
  • 1 tsp organic corn meal (or breadcrumbs of choice)
  • 1/8 tsp Himalayan sea salt
  • 1/8 tsp freshly ground pepper
  • Optional: 1 tsp red pepper flakes

Directions:

  1. In a bowl combine all ingredients and mix well
  2. Form into bite-size patties (balls) and place on greased grill/grill pan
  3. Cook for 4-5 minutes on each side or until cooked through to your liking

Putting Together Burger Bites:

  1. On a plate, place bite-size burger patties
  2. Add desired topping and pin a toothpick through to hold the ‘bite’ together
  3. Serve hot with desired dipping sauces

Meatball Stew

MMM…. This definitely just happened! A hearty meatball stew. I am loving this dish!

For the Stew:

  • 15 oz. organic diced tomato
  • 2 cups organic chicken stock
  • 1 cup organic tomato sauce
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 celery stalk, chopped
  • 2 large organic carrots, chopped
  • 3 medium potatoes of choice, cubed (optional)
  • 2 garlic cloves, crushed
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 teaspoon Himalayan sea salt (more to taste)
  • 1/2 teaspoon freshly ground black pepper

For the Meatballs:

  • 1 lb. grass-fed organic beef
  • 1 tbsp Mrs. Dash Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1 egg
  • 1/2 tbsp gluten-free cornmeal (substitute breadcrumbs of choice)
  • 1/2 tsp Himalayan sea salt
  • Dash freshly ground pepper

Directions:

For the Meatballs:

  1. Preheat oven to 350
  2. Line a baking sheet with foil and spray so it is greased
  3. In a bowl combine all meatball ingredients and mix well
  4. Roll into balls and bake on 350 for 15 minutes, or until fully cooked through
  5. Remove from oven and set aside

For the Stew:

  1. In a large pot heat oil and crushed garlic for 1 minute
  2. Add in chopped onions, carrots, celery, and potatoes and let cook for 8-10 minutes, stirring often
  3. Once vegetables are soft, add in broth, tomato sauce, diced tomatoes, seasoning, and meatballs- mix well
  4. Bring to a boil then reduce heat; simmer over low heat for 30 minutes, stirring occasionally
  5. Taste and adjust spices to your liking, serve hot

Lexi’s Mexican Night (Tacos, Mexican Plates, Lettuce Wraps)

Mexican night is always a big hit around here; and no matter what your food sensitivities are, there are always options! In our home it used to consist of my homemade refried black beans and shredded cheddar cheese, which have since been omitted. Now our taco night is a bit more simplified, but as delicious as ever.  Tacos, taco salads, lettuce wraps, or just the toppings as a Mexican plate? My version of taco night definitely includes all the above, and leftovers!

DIY TACO NIGHT

Ingredients:

For the taco meat:

  • 1 lb. organic grass-fed beef (or ground turkey meat)
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne powder

For the guacamole:

  • 2 ripe avocados
  • 1/8 tsp ground garlic
  • 1 tsp lemon or lime juice
  • A pinch of paprika
  • Himalayan sea salt and freshly ground pepper, to taste
  • A pinch of cayenne pepper (can omit or add more to taste)
  • A pinch of red pepper flakes (can omit or add more to taste)
  • Optional: 1/4 cup tomato, finely chopped
  • Optional: 1/4 cup red onion, minced

Everything else:

  • Organic corn tortilla shells (or tortillas of choice)
  • 3-5 cups organic romaine lettuce, chopped
  • Romaine lettuce leaves
  • 1 organic vine ripe tomato, chopped
  • 1/2 red onion, chopped
  • 1/2 cup scallions, chopped
  • Serve with salsa of choice, homemade or store-bought
  • Optional: 1 cup yellow onion, 1 cup green and red organic peppers, sliced and grilled
  • Optional: Cajun shrimp

Directions:

For the taco meat:

  1. In a small bowl combine the meat seasonings
  2. Take out meat from the refrigerator and place into a separate bowl
  3. Combine seasoning with meat and mix well
  4. Spray a large pan with spray of choice (I either use Trader Joe’s Coconut Oil Spray or Trader Joe’s Extra-Virgin Olive Oil Spray)
  5. Add meat and cook over medium heat until brown
  6. Place into a serving bowl

For the Guacamole:

  1. Cut avocado in half and remove the pit
  2. Scoop out avocado and place into a bowl
  3. Using a fork, lightly mash the avocado (leave some chunks!)
  4. Add spices and mix well, taste and adjust spices to your liking
  5. Right before serving, add onion and tomato and mix to combine (optional)
  6. Place in serving bowl

Everything else:

  1. Chop lettuce, onion, tomato, and scallions and place in serving bowls
  2. Place salsa in a bowl
  3. Cajun Shrimp: coat shrimp (8-12 jumbo shrimps) with 1 tsp chili powder, a dash of garlic, powder, and a dash of cayenne pepper; and grill for 1-2 minutes on each side

I  make sure to put out hot sauce. And there it is, mexican night, and all the variations!
