Italian night! Who needs real pasta? Spaghetti Squash Boats are a huge hit around here. They are filling, tasty, and fun to eat. They go perfectly with my homemade meat sauce or meatballs.

  • 1 15 oz. can organic diced tomatoes
  • 1 15 oz. can organic tomato sauce

  2. In a deep sauce pan heat oil and sauté garlic over medium heat
  3. Add in onion and let cook, stirring occasionally, for 5 minutes until translucent
  4. Add meat and let cook until brown
  5. Add tomato sauce, diced tomatoes, and seasoning and mix well
  6. Bring to a boil then reduce heat to low and let simmer for 15 minutes
  7. Place spaghetti squash halves on a plate; scrape out just a bit of the inside so it fills up the center slightly and top with heaping spoonfuls of meat sauce
  8. Top with fresh basil and fresh parmesan (optional) and serve hot

Since my post today was a side dish, I thought I’d re-blog something DEFINITELY dinner worthy. This Recipe is from a wonderful blog I highly recommend you check out, Lexi’s Clean Kitchen. It’s listed in my links in the side bar. I will definitely be trying this at some point.
