Raspberry Peach Crumble

When I think of summer I think of refreshing fresh fruit, delicious summer meals, and being outdoors with friends and family. And what is a better addition to that combination than a fruity (and healthy) dessert (…or breakfast)?  I’ve been wanting to come up with a clean and healthy, paleo-friendly crumble for some time now and I definitely hit the money with this one. Filled with fresh organic fruit and ground flax, and topped with a blend of raw nuts; aside from the amazing taste alone; this dessert is loaded with nutrients!

Ingredients:
Filling:
  • 4 organic peaches, peeled and sliced
  • 6 oz. organic raspberries (blueberries would be great or sub other berry of choice)
  • 1 tbsp pure local honey (sub raw honey, agave syrup, or maple syrup)
  • 1 tsp cinnamon
  • 1 tbsp ground flax
Topping:
  • 1/3 cup ground walnuts
  • 3 tbsp almond meal (ground raw almonds)
  • 1 tbsp pure local honey (sub raw honey, agave syrup, or maple syrup)
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch salt
Directions:
  1. Preheat oven to 350 degrees
  2. Peel and slice peaches
  3. In a bowl combine sliced peaches, raspberries, cinnamon, flax, and honey; mix well
  4. Line a glass baking dish with peach and raspberry mixture
  5. Place walnuts in a nut grinder and grind fine (will be 1/3 cup after ground)
  6. In a bowl combine walnuts, almond meal, cinnamon vanilla, salt, and honey. Mix with a fork until crumbly
  7. Pour crumble mixture evenly over fruit
  8. Bake until top is golden brown and fruit is hot and bubbly, 40-50 minutes
