Italian-Style Spaghetti Squash Bake

Ingredients:

  • 1 Spaghetti squash
  • 3 pieces organic boneless chicken breasts, baked and shredded
  • 3 handfuls fresh spinach
  • 1 tsp extra-virgin olive oil
  • 1 clove garlic, crushed
  • 1 cup tomato sauce of choice (homemade or jar)
  • 1 egg
  • 1/4 cup fresh parmesan cheese (can omit)
  • 1 1/2 tbsp Mrs. Dash Italian seasoning (I like a lot of this so I often add a little more)
  • 1/2 tsp red pepper flakes (more to taste)
  • 1 tbsp garlic powder
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp salt

  1. Preheat the oven to 375
  2. Roast Spaghetti Squash (how to)
  3. Cut spaghetti squash in half and scrape out seeds
  4. Line baking pan with tin foil and spray with olive oil spray
  5. Lay spaghetti squash halves face down or and bake for about 30 minutes until you can pierce with a fork
  6. Take out roasted squash and scrape out noodle strands using a fork into a bowl, set aside (leave the oven on)
  7. On a pan over medium heat, heat oil and sauté garlic. Add spinach and sauté.
  8. Shred pre-baked chicken
  9. In a large bowl combine spaghetti squash, chicken, and spinach with tomato sauce, egg, cheese and seasonings
  10. Transfer entire mixture into a pyrex glass baking dish
  11. Sprinkle with fresh parmesan and red pepper flakes
  12. Bake on 375 for 10 minutes then broil on high for 5 or until top is crispy
