Lemon-Basil Shrimp Salad

Tangy with a kick, this shrimp salad is the perfect refreshing lunch on a summer day.

Ingredients:

  • 15-20 large cooked shrimp
  • 1 cup grape tomatoes, diced
  • 1 red onion, chopped

Ingredients for Lemon-Basil Marinade:

  • 1/2 lemon, juiced
  • 1 tbsp rice vinegar
  • 1 tbsp evoo
  • 1 clove garlic, crushed
  • 1 1/2 tbsp fresh basil, chopped
  • 1 tsp sriracha (more to taste)
  • 1 tsp honey
  • 1 tsp dijon mustard

Directions:

  1. Clean and remove tails from shrimp
  2. Chop grape tomatoes and onion
  3. In one bowl combine shrimp, grape tomatoes, and onion and set aside
  4. In another bowl combine marinade ingredients and mix well, taste and add more ingredients to your liking
  5. Pour marinade over shrimp salad and toss
  6. Serve in a lettuce leaf, garnish with fresh basil, and place the rest of the lemon on the side
